Slow Sunday — steaming coffee pot

Slow Sunday

$20 / 12oz

Swiss Water decaf from Guatemala Antigua, roasted medium — brown sugar, toasted almond, no chemical solvents.

Origin
Antigua, Guatemala
Altitude
1,500–1,700m
Process
Washed + Swiss Water Decaf
Variety
Bourbon, Caturra
Roast level
Medium

Decaf gets a bad reputation mostly because it gets a bad roast — the beans are more fragile and porous after processing, and a curve tuned for green beans will scorch them. Slow Sunday runs a longer, gentler ramp with a lower charge temperature to compensate.

Swiss Water process removes caffeine using only water, temperature, and time — no methylene chloride, no ethyl acetate. Tastes like a real Antigua coffee, not like an apology for one.
