October–January

We’ve bought from this cooperative union for six harvests running. Most member farms are under two hectares — this is smallholder coffee in the truest sense, with cherry delivered by hand or bicycle to a shared washing station rather than processed on a single large estate.

The washing station’s fermentation tanks and raised drying beds are what let Yirgacheffe lots carry the clean, floral character they’re known for — sloppy processing at the wet mill undoes good farming faster than anything that happens after the beans leave the country.
